Asparagus Eggs


  • 3 bagels, halved and toasted with soy butter
  • 1 large bunch of asparagus, with the tough ends removed and the stalks washed and steamed
  • 3 tbsp of soy butter
  • 10 eggs
  • 2 tbsp of red onion, chopped
  • salt and pepper to taste


  1. Melt the butter in a pan on a med-high heat and scramble the eggs.
  2. Arrange the asparagus stalks on a large platter and dump the scrambled eggs over top them.
  3. Sprinkle the red onion over top
  4. Serve with the toasted bagels.
