Three Herbs Omelet

Ingredients:

  • 5 eggs, beaten or egg substitute
  • 2 tbsp of olive oil
  • 5 basil leaves, chopped
  • 2 tbsp of thyme, chopped
  • 3 sage leaves, chopped
  • 1/2 clove of garlic
  • Salt and pepper
  • 1/2 onion, chopped

Directions:

  1. Sautee the basil, thyme, sage, onion and garlic in the oil over a medium heat for 4 minutes. Add the egg. Turn the heat to low. Add salt and pepper to taste. Brown the omelet on both sides.
  2. Cut into pizza wedges.

Serves: 4 persons

 

 

Basil Tomato Omelet

Ingredients:

  • 5 eggs, beaten or egg substitute
  • 10 basil leaves, chopped
  • 10 cherry tomatoes, halved
  • 1 clove of garlic, chopped
  • 1 tbsp of olive oil
  • Salt and pepper

Directions:

  1. Sautee the basil, tomato and garlic in the oil over a medium heat for 4 minutes.
  2. Add the egg.
  3. Turn the heat to low.
  4. Add salt and pepper to taste.
  5. Brown the omelet on both sides.
  6. Cut into pizza wedges.

Serves: 4 persons
