Mama's Kitchen Dilemmas



Thumbprint cookies

Ingredients:

  • 1 roll refrigerated sugar cookie dough
  • 1 c. finely ground walnuts
  • Strawberry jam or jelly
  • 1 thumb-size sewing thimble
  • parchment paper

Directions:

  1. Preheat oven to 350 degrees F.
  2. Slice refrigerated cookie dough into ½-inch rounds.
  3. Cut each round in half and roll into small ball.
  4. Roll the ball in the ground walnuts until covered well in walnuts.
  5. Place each ball on cookie sheet lined with parchment paper. Bake for 8-11 minutes.
  6. While cookies are still hot, make an indentation with the thimble in the center.
  7. Allow cookies to cool and fill indentation with the jam or jelly.

Makes 36 cookies

 

 

 

Low-fat banana cookies

Ingredients:

  • 2 egg substitutes
  • ½ c. mashed ripe bananas
  • ¼ c. flour
  • 1 tsp. vanilla extract

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients in a mixing bowl.
  3. Drop dough into rounded teaspoonfuls onto a greased cookie sheet.
  4. Bake 10-12 minutes or until edges are light brown.

Makes 36 cookies
