Mama's Kitchen Dilemmas



Pistachio Cookies

Ingredients:

  • 1 cup of brown sugar
  • 2 egg yolks
  • 2/3 cup of butter
  • 1 tsp of butter
  • 1 tsp of vanilla
  • 2 cups of flour
  • 1/2 tsp of baking powder
  • 1/4 tsp of salt
  • 1/4 tsp of baking soda
  • 1 cup of crushed pistachios

Directions:

  1. Preheat oven to 400 degrees F.
  2. Mix together the butter and sugar.
  3. Add the egg, vanilla, brown sugar, baking powder, salt, baking soda, and crushed pistacchios.
  4. Mix well.
  5. Roll the dough into fat logs and refrigerate them for 5 hours.
  6. Slice the dough log into pieces 1/4 inch thick.
  7. Place dough logs on a cookie sheet
  8. Bake dough logs in a 400-degree oven for 8 minutes.

Makes: 3-dozen cookies

 

 

 

Almond Pistachio Treats

Ingredients:

  • 2 cups of almond paste, grated
  • 1 cup of sugar
  • 1 1/4 cup of powdered sugar
  • 4 egg whites
  • 1/4 tsp of salt
  • 1 cup of pistachios, crushed
  • 2 tsp of vanilla

Directions:

  1. Preheat oven to 325 degrees F.
  2. Mix all the ingredients well in an electric blender for 6 minutes on med-high speed.
  3. Place the dough in the refrigerator for 3 hours.
  4. Form the dough into small balls and place them on a cookie sheet.
  5. Bake them in a 325-degree oven for 22 minutes.

Makes: 3 dozen cookies
