Mama's Kitchen Dilemmas



Peppermint Stick Cookies

Ingredients:

  • 1/4 cup of powdered sugar
  • 1 cup of white sugar
  • 1/2 cup of crushed peppermint candies
  • 1/4 (extra) cup of crushed peppermint candies
  • 1 tsp of vanilla
  • 1/4 tsp of salt
  • 2 1/2 cups of flour
  • 1 cup of butter

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix together 1/4 cup of crushed peppermint candies, vanilla, 1/4 cup of powdered sugar.
  3. Add the salt, butter and flour.
  4. Mix well.
  5. Mix together the white sugar, crushed candy and put aside.
  6. Form dough balls and place them on a baking sheet and in a 350-degree oven for 12 minutes.
  7. Remove them form the oven and roll them in the powdered sugar and crush candy.
  8. Allow them to cool.

Makes: 2.5 dozen cookies

 

 

 

Pineapple Cookies

Ingredients:

  • 2 cups of flour
  • 1/2 cup of shortening
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 1/4 tsp of baking soda
  • 1 cup of brown sugar
  • 1 tsp of vanilla
  • 2 eggs
  • 1/2 cup of chopped walnuts
  • 1 tsp of lemon juice
  • 1 1/2 cups of crush pineapple
  • 1 cup of coconut flakes

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a separate bowl, mix together the shortening, vanilla, eggs, lemon juice, and crushed pineapples (wet ingredients).
  3. In a separate bowl, mix together flour, baking powder, salt, baking soda, chopped walnuts, and coconut flakes (dry ingredients).
  4. Add the dry ingredients to the wet ingredients and place in an electric blender.
  5. Mix well.
  6. Scoop tablespoon –size portions of dough onto the baking sheet.
  7. Place the cookies in a 350-degree oven for 11 minutes.
