Peppermint Stick Cookies
Ingredients:
- 1/4 cup of powdered sugar
- 1 cup of white sugar
- 1/2 cup of crushed peppermint candies
- 1/4 (extra) cup of crushed peppermint candies
- 1 tsp of vanilla
- 1/4 tsp of salt
- 2 1/2 cups of flour
- 1 cup of butter
Directions:
- Preheat oven to 350 degrees F.
- Mix together 1/4 cup of crushed peppermint candies, vanilla, 1/4 cup of powdered sugar.
- Add the salt, butter and flour.
- Mix well.
- Mix together the white sugar, crushed candy and put aside.
- Form dough balls and place them on a baking sheet and in a 350-degree oven for 12 minutes.
- Remove them form the oven and roll them in the powdered sugar and crush candy.
- Allow them to cool.
Makes: 2.5 dozen cookies
Pineapple Cookies
Ingredients:
- 2 cups of flour
- 1/2 cup of shortening
- 1 tsp of baking powder
- 1/4 tsp of salt
- 1/4 tsp of baking soda
- 1 cup of brown sugar
- 1 tsp of vanilla
- 2 eggs
- 1/2 cup of chopped walnuts
- 1 tsp of lemon juice
- 1 1/2 cups of crush pineapple
- 1 cup of coconut flakes
Directions:
- Preheat oven to 350 degrees F.
- In a separate bowl, mix together the shortening, vanilla, eggs, lemon juice, and crushed pineapples (wet ingredients).
- In a separate bowl, mix together flour, baking powder, salt, baking soda, chopped walnuts, and coconut flakes (dry ingredients).
- Add the dry ingredients to the wet ingredients and place in an electric blender.
- Mix well.
- Scoop tablespoon –size portions of dough onto the baking sheet.
- Place the cookies in a 350-degree oven for 11 minutes.
