Peanut Butter Cookies


  • 3/4 cup of creamy peanut butter
  • 1/4 cup of shortening
  • 1/2 cup of brown sugar
  • 1 egg
  • 1 1/4 cup of flour
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1/2 cup of crushed peanuts.


  1. Preheat oven to 375 degrees F.
  2. Mix all the ingredients in a blender well for at least 5 minutes.
  3. Refrigerate the dough for 2 hours.
  4. Form small balls with the dough.
  5. Place balls of dough on a cookie sheet and press them down with a fork.
  6. Bake in a 375-degree oven for 10 minutes.




Black Walnut Cookies


  • 1 cup of sugar
  • 2 cups of flour
  • 4 oz. of butter
  • 1 tsp of vanilla extract
  • 1 1/2 cups of black walnuts, chopped
  • 1/2 tsp of salt
  • 1/4 cup of shortening


  1. Preheat oven to 350 degrees F.
  2. Mix butter, shortening and vanilla extract in a large bowl.
  3. Add sugar, flour, walnuts, salt to butter mixture and mix blend together with a hand mixer.
  4. Place the dough in the refrigerator for one hour.
  5. Remove the dough and roll it into 2 logs.
  6. Refrigerate the dough for another 5 hours.
  7. Line baking sheets with parchment paper.
  8. Cut slices from the dough logs, 1/4-inch big.
  9. Place the dough logs on the cookies sheets and bake in a 350-degree oven for 15 minutes.

Makes: 3 1/2 dozen cookies
