Peanut Butter Cookies
Ingredients:
- 3/4 cup of creamy peanut butter
- 1/4 cup of shortening
- 1/2 cup of brown sugar
- 1 egg
- 1 1/4 cup of flour
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1/2 tsp of salt
- 1/2 cup of crushed peanuts.
Directions:
- Preheat oven to 375 degrees F.
- Mix all the ingredients in a blender well for at least 5 minutes.
- Refrigerate the dough for 2 hours.
- Form small balls with the dough.
- Place balls of dough on a cookie sheet and press them down with a fork.
- Bake in a 375-degree oven for 10 minutes.
Black Walnut Cookies
Ingredients:
- 1 cup of sugar
- 2 cups of flour
- 4 oz. of butter
- 1 tsp of vanilla extract
- 1 1/2 cups of black walnuts, chopped
- 1/2 tsp of salt
- 1/4 cup of shortening
Directions:
- Preheat oven to 350 degrees F.
- Mix butter, shortening and vanilla extract in a large bowl.
- Add sugar, flour, walnuts, salt to butter mixture and mix blend together with a hand mixer.
- Place the dough in the refrigerator for one hour.
- Remove the dough and roll it into 2 logs.
- Refrigerate the dough for another 5 hours.
- Line baking sheets with parchment paper.
- Cut slices from the dough logs, 1/4-inch big.
- Place the dough logs on the cookies sheets and bake in a 350-degree oven for 15 minutes.
Makes: 3 1/2 dozen cookies
