Mama's Kitchen Dilemmas



Reduced-fat, Low-sugar Chocolate Cookies

Ingredients:

  • 1 ¼ c. margarine, softened
  • 2 c. Splenda
  • 2 egg substitutes
  • 2 tsp. vanilla extract
  • 2 c. flour
  • ¾ c. cocoa
  • 1 tsp. baking soda

Directions:

  1. Preheat oven to 350 degrees F.
  2. Beat margarine at medium speed with mixer until creamy.
  3. Gradually add Splenda, egg substitutes and vanilla, mixing well until blended.
  4. In separate bowl, mix flour and cocoa and baking soda.
  5. Gradually add margarine mixture; beat on low speed.
  6. Shape dough into 1-in. balls and place on lightly greased baking sheets.
  7. Bake 18-20 minutes at 350 degrees F.
  8. Let cool and serve.

Makes 24 cookies

 

 

 

4 Ingredient Peanut Butter Cookies

Ingredients:

  • 1 cup Bisquick
  • 1 cup sugar
  • 1 cup peanut butter
  • 1 egg

Directions:

  1. Preheat oven to 400 degrees F.
  2. Mix all ingredients.
  3. Roll dough into ball and place on cookie sheet.
  4. Press flat with a fork.
  5. Bake at 400 degrees for 10-15 minutes.
