Mama's Kitchen Dilemmas



Lemon Drops

Ingredients:

  • 1 cup of flour
  • 2 tbsp of grated lemon rind
  • 1/2 cup of butter
  • 1/4 cup of white sugar
  • 1 lemon, squeezed

Directions:

  1. Preheat oven to 325 degrees F.
  2. Mix together all the ingredients.
  3. Shape the dough into small balls and place them on a baking sheet.
  4. Flatten the dough balls with a fork and place them in a 325-degree oven for 6-8 minutes.

Makes: 30 cookies

 

 

 

Mint Chocolate Cookies

Ingredients:

  • 2 eggs
  • 2 cups of brown sugar
  • 2 cups of flour
  • 1 1/2 tsp of vanilla
  • 1 1/2 cups of butter, melted
  • 2/3 cup of baking cocoa
  • 3 dozen thin chocolate peppermint wafers
  • 1/2 tsp of salt
  • 1/2 tsp of baking soda

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix together the butter, sugar and eggs.
  3. Add the vanilla, followed by the flour and cocoa, baking soda and salt.
  4. Mix all the ingredients well.
  5. Place tbsp-size scoops of dough on a baking sheet.
  6. Place dough in oven and bake at 350 degrees for 9 minutes.
  7. Remove from oven and press a mint wafer into the top of each cookie.

Makes: 3-dozen cookies
