Homemade, Sugar-free Ice Cream Mix

Ingredients:

  • 4 eggs, beaten
  • 2 ½ c. Splenda
  • 5 c. skim milk
  • 4 c. cream
  • 5 tsp. vanilla
  • ½ tsp. salt

Directions:

  1. Combine all ingredients in a large bowl until well-mixed.
  2. Pour mixture into ice cream maker canister.
  3. Follow directions for making of ice cream according to the instructions included with the ice cream maker.

 

 

 

Low-fat Lemon Bars

Ingredients:

  • White angel food cake mix
  • One can (14-16 oz.) lemon pie filling
  • One can low-fat vanilla or lemon frosting

Directions:

  1. Preheat oven to 350 degrees F.
  2. Prepare angel food cake mix according to directions.
  3. Add lemon pie filling and mix well.
  4. Pour into large, sided cookie sheet. Bake for 25 minutes.
  5. Cool and frost.
