Georgian Fruitcake
Ingredients:
- 2 cups of dried dates, chopped
- 2 cups of dried apricots, chopped
- 1 cup of butter
- 1 tbsp of lemon juice
- 1/2 cup of honey
- 1/4 cup of water
- 2 cups of walnuts, chopped
- 2 cups of pecans, chopped
- 2 cups of raisins
- 1 1/2 cups of packed brown sugar
- 1 tsp of cinnamon
- 1 tsp of crushed cloves
- 1/4 tsp of baking soda
- 2 cups of flour
- 4 eggs
Directions:
- Preheat oven to 300 degrees F.
- Mix all the ingredients together in an electric blender for 10 minutes on medium-high-low speed.
- Pour the fruitcake dough into greased bread pans.
- Bake fruitcake in a 300-degree oven for 100 minutes.
- Remove from the oven, allow them to cool and wrap them in plastic wrap and then a towel before giving them as gifts or storing in the cupboard.
Whole Grain Fruitcake
Ingredients:
- 1 cup of chopped, dried figs
- 1 cup of apricots, dried and chopped
- 1 cup of apple juice
- 2 cups of buck wheat flour
- 2 cups of chopped walnuts and pecans
- 1 tsp of baking soda
- 2 cups of raisins
- 1 tsp of cinnamon
- 1 tsp of nutmeg
- 1 tsp of baking powder
- 1/3 cup of vegetable oil
- 3 eggs
- 2 tbsp of grated orange peel
- 1 tsp of vanilla
- 1/2 cup of brown sugar
- 1/4 cup of rum
- 2 tbsp of grated lemon peel
- 1 tsp of cloves, crushed
Directions:
- Preheat oven to 300 degrees F.
- Mix all the ingredients together in an electric blender for 10 minutes on medium-high-low speed.
- Pour the fruitcake dough into greased bread pans.
