Mama's Kitchen Dilemmas



Fig Drops

Ingredients:

  • 1 cup of butter
  • 1/2 cup of brown sugar
  • 1/2 cup of white sugar
  • 1 egg
  • 2 cups of flour
  • 1tsp of vanilla
  • 1 1/2 cups of black figs, chopped
  • 2 tsp of baking powder
  • 1/2 cup of pecans, chopped
  • 1/2 tsp of salt
  • 1/3 cup of water

Directions:

  1. Preheat oven to 375 degrees F.
  2. Bring the water to a boil.
  3. Simmer the figs in the water for five minutes, stirring constantly.
  4. Mix together the butter, sugar, egg, vanilla. (Wet ingredients)
  5. Mix together the brown sugar, white sugar, flour, baking powder, pecans, and salt. (Dry ingredients)
  6. Mix together the dry ingredients and add them to the wet ingredients.
  7. Stir in the figs and blend well in an electric blender.
  8. Drop tablespoon-size scoops of dough on to a baking sheet
  9. Bake cookies in a 375-degree oven for 11 minutes.

Makes: 3 1/2 dozen cookies

 

 

 

Classic Sugar Cookies

Ingredients:

  • 1 cup of powdered sugar
  • 1 cup of butter
  • 1 cup of vegetable oil
  • 2 eggs
  • 1 cup of white sugar
  • 4 1/2 cups of flour
  • 1 tsp baking powder
  • 1 tsp of baking soda

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a separate bowl, mix together butter, vegetable oil, and eggs. (Wet ingredients)
  3. In a separate bowl, mix together powdered sugar, white sugar, flour, baking soda, and baking powder. (Dry ingredients)
  4. Mix together the wet and dry ingredients.
  5. Place the dough in a refrigerator for 3 hours.
  6. Spread flour on a flat countertop and roll out the dough with a rolling pin.
  7. Add flour as needed to prevent the dough from sticking to anything.
  8. Use cookie cutters to cut out shapes from the rolled-out dough.
  9. Place the cookies on a baking sheet, sprinkle them with colored sugar
  10. Bake cookies in a 350-degree oven for 10 minutes or until cookies look golden on the edges.
