Mama's Kitchen Dilemmas



Classic Coffee Cake

Ingredients:

  • 2 cups of flour
  • 3 tsp of baking powder
  • 1 egg
  • 2/3 cup of sugar
  • 1/3 cup of butter
  • 1/2 tsp of salt
  • 1 tsp of honey
  • 1 cup of milk
  • 1 tsp of vanilla extract

Topping Ingredients:

  • 2 tbsp of butter
  • 3/4 cup of brown sugar
  • 1 tsp of cinnamon

Directions:

  1. Preheat oven to 375 degrees F.
  2. Make the topping.
    • Mix together all the topping ingredients.
    • Set topping aside.
  3. Mix together all the cake ingredients in an electric mixer.
  4. Pour the batter into a greased cake dish.
  5. Pour the topping over the batter.
  6. Bake the cake in a 375-degree oven for 33 minutes.

 

 

 

Christmas Walnut and Apple Spice Cake

Ingredients:

  • 4 apples, peeled and chopped
  • 2 tbsp of shortening
  • 2 tbsp of sugar
  • 2 tsp of baking powder
  • 1 tsp of salt
  • 1/2 cup of milk
  • 2 tbsp of honey
  • 1 egg
  • 3/4 cup of chopped walnuts
  • 1 tsp of cinnamon
  • 1 tsp of nutmeg
  • 4 tbsp of brown sugar

Directions:

  1. Preheat oven to 400 degrees F.
  2. Combine all the ingredients together in a blender and mix them on a medium speed for 5 minutes.
  3. Pour the cake batter into greased cake pans
  4. Bake cake in a 400-degree oven for 35 minutes.
  5. Serve with vanilla ice cream.
