Mama's Kitchen Dilemmas



Coconut Cookies

Ingredients:

  • 3/4 cup of sugar
  • 1 cup of coconut, shredded
  • 1 tsp of vanilla
  • 1 jar of lemon marmalade
  • 2 pre-made and refrigerated pie crusts
  • 1/4 cup of melted butter
  • 1 egg

Directions:

  1. Preheat oven to 375 degrees F.
  2. Combine the sugar, coconut, vanilla and egg. Add the butter.
  3. Open the pie crusts and cut disk-shaped pieces from the crust, 2 1/2 –3 inches in diameter.
  4. Place the pieces of dough into a greased muffin pan.
  5. Add a teaspoon of the lemon marmalade to each dough disk in the muffin tray.
  6. Add 1 1/2 tsp of the coconut mix on top.
  7. Bake the cookies in a 375-degree oven for 12-15 minutes.

Makes: 15-20 cookies

 

 

 

Brown Sugar Treats

Ingredients: 

  • 1 cup of packed brown sugar
  • 1 1/2 cups of butter
  • 1 egg
  • 3 1/2 cups of wheat flour
  • 2 tsp of ginger powder
  • 2 tsp of cinnamon
  • 1 tsp of vanilla extract
  • 1 tsp of baking powder
  • 1 tsp of ground cloves

Directions:

  1. Preheat oven to 375 degrees F.
  2. Combine the butter and sugar, eggs and vanilla.
  3. Add the wheat flour, ginger powder, cinnamon, baking powder, and ground cloves .
  4. Mix well with an electric blender for 5 minutes.
  5. Place the dough in a pastry bag and squeeze small globs of dough onto a baking sheet.
  6. Bake the cookies in a 375-degree oven for 10 minutes.
