Coconut Cookies
Ingredients:
- 3/4 cup of sugar
- 1 cup of coconut, shredded
- 1 tsp of vanilla
- 1 jar of lemon marmalade
- 2 pre-made and refrigerated pie crusts
- 1/4 cup of melted butter
- 1 egg
Directions:
- Preheat oven to 375 degrees F.
- Combine the sugar, coconut, vanilla and egg. Add the butter.
- Open the pie crusts and cut disk-shaped pieces from the crust, 2 1/2 –3 inches in diameter.
- Place the pieces of dough into a greased muffin pan.
- Add a teaspoon of the lemon marmalade to each dough disk in the muffin tray.
- Add 1 1/2 tsp of the coconut mix on top.
- Bake the cookies in a 375-degree oven for 12-15 minutes.
Makes: 15-20 cookies
Brown Sugar Treats
Ingredients:
- 1 cup of packed brown sugar
- 1 1/2 cups of butter
- 1 egg
- 3 1/2 cups of wheat flour
- 2 tsp of ginger powder
- 2 tsp of cinnamon
- 1 tsp of vanilla extract
- 1 tsp of baking powder
- 1 tsp of ground cloves
Directions:
- Preheat oven to 375 degrees F.
- Combine the butter and sugar, eggs and vanilla.
- Add the wheat flour, ginger powder, cinnamon, baking powder, and ground cloves .
- Mix well with an electric blender for 5 minutes.
- Place the dough in a pastry bag and squeeze small globs of dough onto a baking sheet.
- Bake the cookies in a 375-degree oven for 10 minutes.
