Christmas Fruit Cookies

Ingredients:

  • 1 c. soft shortening
  • 2 c. brown sugar
  • 2 egg substitutes
  • 3 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 1/2 c. pecans, broken
  • 2 c. candied cherries
  • 2 c. dates, cut up

Directions:

  1. Preheat oven to 400 degrees F.
  2. Mix shortening, brown sugar and egg substitutes.
  3. Add flour, soda and salt.
  4. Add fruits: pecans, cherries, and dates.
  5. Chill at least one hour.
  6. Drop by teaspoon 2 inches apart on greased cookie sheet.
  7. Bake in 400 degree until lightly browned (6-9 minutes).

 

 

 

 

Low-sugar Norwegian Cookies

Ingredients:

  • 1 c. Splenda
  • 1 c. margarine
  • 2 c. flour
  • 1 tsp. soda
  • 1 egg substitute
  • 3 tsp. cinnamon
  • 1 tbsp. dark Karo syrup
  • 1 ½ tsp. cloves

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cream margarine, Splenda and egg substitute.
  3. Add Karo syrup and dry ingredients.
  4. Make into small balls.
  5. Press down with glass (covered with butter and sugar).
  6. Bake at 350 degrees for 10 minutes. (Better chilled before baking.)
