Mama's Kitchen Dilemmas



Chocolate Shortbread Cookies

Ingredients: 

  • 1 cup of powdered sugar
  • 2 sticks of butter, softened
  • 1/3 cup of sugar
  • 1 cup of finely chopped walnuts
  • 6 oz. of semi sweet chocolate, melted

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cream together the sugar, butter.
  3. Place the dough in the refrigerator for 1 hour.
  4. Cut the refrigerated dough into 3-inch finger shaped pieces.
  5. Place dough on a cookie sheet
  6. Bake dough in a 330-degree oven for 15 minutes.
  7. Cool the shortbread and dip the in the melted chocolate and roll them in the walnuts.

 

 

 

Carmel Apple Treats

Filling:

  • 1/3 cup of evaporated milk
  • 1/3 cup of sugar
  • 3/4 cup of chopped apple

Dough:

  • 1 egg
  • 1 stick of softened butter
  • 2 cups of flour
  • 1/4 cup of brown sugar
  • 1/4 cup of confectionary sugar
  • 1 tsp of vanilla
  • 1/ tsp of salt

Garnish:

  • 1 cup of finely chopped walnuts
  • 14 oz. package of caramels
  • 1/4 cup of evaporated milk

Directions:

  1. Preheat oven to 350 degrees F.
  2. Make the filling: sauté the apples, sugar and milk in a pan until the ingredients become thick.
  3. Make the dough: mix the butter and sugar. Add the egg, salt and vanilla. Slowly mix in the flour.
  4. Make balls of dough with your hand and flatten them.
  5. Add a small dollop of the filling to the center of the dough and reform the cookie into a ball.
  6. Place the dough balls on a greased cookie sheet and in a 350-degree oven for 15 minutes.
  7. Make the garnish; heat the caramels and milk in a sauce pan.
  8. Dip the cookies in the melted caramels and them in the walnuts.
