Mama's Kitchen Dilemmas



Chocolate chip oatmeal cookies

Ingredients:

  • 2 eggs
  • 4 tbsp of buttermilk
  • 2 cups of semi-sweet chocolate chips
  • 1 tsp of baking soda
  • 2 3/4 cups of oatmeal (rolled oats)
  • 2 tsp of vanilla extract
  • 1 cup of butter, soft
  • 2 cup of buckwheat flour
  • 1 cup of chopped walnuts
  • 1/2 tsp of salt
  • 2 cups of brown sugar

Directions:

  1. Heat the oven to 350 degrees.
  2. Mix the wet ingredients: buttermilk, eggs, butter and vanilla.
  3. Add the sugar and mix well.
  4. Add the flour and oats; salt and baking soda.
  5. Fold in the walnuts and chocolate chips.
  6. Stir all the ingredients well.
  7. Roll a spoonful of dough in your palm and flatten it on a baking sheet.
  8. Place the cookies in the oven for 10 minutes.

 

 

 

Espresso cookies

Ingredients:

  • 4 large squares of unsweetened chocolate
  • 1 1/2 cups of semi-sweet chocolate
  • 3/4 cup of butter
  • 3 eggs
  • 3 tsp of ground espresso beans
  • 1 cup of flour
  • 1/3 tsp of baking powder
  • 3/4 cup of walnuts, crushed
  • 1/2 tsp of salt

Directions:

  1. Heat the oven to 350 degrees.
  2. Melt the chocolate and butter in a pan on a low heat. Mix them well and remove the pan from the stove.
  3. Add the sugar and eggs and beat the mixture for 2 minutes.
  4. Add the espresso and mix well.
  5. Add the baking powder, flour, and salt. Fold in the walnuts.
  6. Roll a spoonful of dough in your palm and flatten it on a baking sheet.
  7. Place the cookies in the oven for 10 minutes.
