Chocolate Chip Oatmeal Cookies
Ingredients:
- 2 eggs
- 4 tbsp of buttermilk
- 2 cups of semi-sweet chocolate chips
- 1 tsp of baking soda
- 2 3/4 cups of oatmeal (rolled oats)
- 2 tsp of vanilla extract
- 1 cup of butter, soft
- 2 cup of buckwheat flour
- 1 cup of chopped walnuts
- 1/2 tsp of salt
- 2 cups of brown sugar
Directions:
- Heat the oven to 350 degrees.
- Mix the wet ingredients: buttermilk, eggs, butter and vanilla.
- Add the sugar and mix well.
- Add the flour and oats; salt and baking soda.
- Fold in the walnuts and chocolate chips.
- Stir all the ingredients well.
- Roll a spoonful of dough in your palm and flatten it on a baking sheet.
- Place the cookies in the oven for 10 minutes.
Espresso Cookies
Ingredients:
- 4 large squares of unsweetened chocolate
- 1 1/2 cups of semi-sweet chocolate
- 3/4 cup of butter
- 3 eggs
- 3 tsp of ground espresso beans
- 1 cup of flour
- 1/3 tsp of baking powder
- 3/4 cup of walnuts, crushed
- 1/2 tsp of salt
Directions:
- Heat the oven to 350 degrees.
- Melt the chocolate and butter in a pan on a low heat. Mix them well and remove the pan from the stove.
- Add the sugar and eggs and beat the mixture for 2 minutes.
- Add the espresso and mix well.
- Add the baking powder, flour, and salt. Fold in the walnuts.
- Roll a spoonful of dough in your palm and flatten it on a baking sheet.
- Place the cookies in the oven for 10 minutes.
