Mama's Kitchen Dilemmas



Cheesecake Cookies

Ingredients:

  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 1/2 cup of walnuts, chopped
  • 1/3 cup of butter
  • 1 egg
  • 1/4 cup of powdered sugar
  • 1 cup of flour
  • 3 tsp of lemon juice
  • 1 tsp of vanilla
  • 1 (8 oz)package of cream cheese

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix white sugar, brown sugar, flour and walnuts.
  3. Add the butter and vanilla.
  4. Mix the ingredients in a blender and press the dough flat on a greased baking sheet.
  5. Bake the dough in a 350-degree oven for 14 minutes.
  6. Make the cheesecake topping:
    • Beat the cream cheese with powdered sugar.
    • Add the lemon juice and egg.
    • Mix well in a blender.
    • Pour the topping on the baked dough.
  7. Place the tray back in the oven to bake at 350 degrees for 20 minutes.
  8. Refrigerate the cake for cheesecake cookie cake for 1 hour and cut into bars before serving.

 

 

 

Mini Fruitcake Treats

Ingredients:

  • 1 1/4 lb of chopped dates
  • 1 quart of nuts
  • 1/2 lb of candied pineapple
  • 1/2 lb of candied cherries
  • 2 eggs
  • 1/2 cup of cream
  • 2 tsp of almond extract
  • 1 cup of butter
  • 2 1/2 cups of flour
  • 1 tsp of baking powder
  • 1 tsp of salt
  • 2 tsp of cinnamon

Directions:

  1. Preheat oven to 325 degrees F.
  2. Cut up the fruit and nuts.
  3. Roll the fruits and nuts in flour and set them aside.
  4. Mix the flour, cinnamon, salt and baking soda.
  5. Add the butter, sugar and almond extract.
  6. Add the cream and eggs.
  7. Mix all these ingredients in a blender.
  8. Add the fruit and nuts.
  9. Mix well.
  10. Place tablespoon-size dough balls onto the greased cookie sheet.
  11. Place dough balls in a 325-degree oven for 14 minutes.
