Cheesecake Cookies
Ingredients:
- 1/2 cup of sugar
- 1/2 cup of brown sugar
- 1/2 cup of walnuts, chopped
- 1/3 cup of butter
- 1 egg
- 1/4 cup of powdered sugar
- 1 cup of flour
- 3 tsp of lemon juice
- 1 tsp of vanilla
- 1 (8 oz)package of cream cheese
Directions:
- Preheat oven to 350 degrees F.
- Mix white sugar, brown sugar, flour and walnuts.
- Add the butter and vanilla.
- Mix the ingredients in a blender and press the dough flat on a greased baking sheet.
- Bake the dough in a 350-degree oven for 14 minutes.
- Make the cheesecake topping:
- Beat the cream cheese with powdered sugar.
- Add the lemon juice and egg.
- Mix well in a blender.
- Pour the topping on the baked dough.
- Place the tray back in the oven to bake at 350 degrees for 20 minutes.
- Refrigerate the cake for cheesecake cookie cake for 1 hour and cut into bars before serving.
Mini Fruitcake Treats
Ingredients:
- 1 1/4 lb of chopped dates
- 1 quart of nuts
- 1/2 lb of candied pineapple
- 1/2 lb of candied cherries
- 2 eggs
- 1/2 cup of cream
- 2 tsp of almond extract
- 1 cup of butter
- 2 1/2 cups of flour
- 1 tsp of baking powder
- 1 tsp of salt
- 2 tsp of cinnamon
Directions:
- Preheat oven to 325 degrees F.
- Cut up the fruit and nuts.
- Roll the fruits and nuts in flour and set them aside.
- Mix the flour, cinnamon, salt and baking soda.
- Add the butter, sugar and almond extract.
- Add the cream and eggs.
- Mix all these ingredients in a blender.
- Add the fruit and nuts.
- Mix well.
- Place tablespoon-size dough balls onto the greased cookie sheet.
- Place dough balls in a 325-degree oven for 14 minutes.
