Cranberry Bundt Cake

Ingredients:

  • 1 cup of sugar
  • 1 stick of unsalted butter
  • 1 pinch of salt
  • 2 cups of flour
  • 1/2 pint of light sour cream
  • 1 tsp of almond extract
  • 1 can of cranberry sauce
  • 1/2 cup of chopped walnuts
  • 1 tsp of baking powder
  • 2 eggs

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine all the ingredients in an electric mixer.
  3. Blend them on high for 5 minutes.
  4. Pour the cake batter into greased cake pans
  5. Bake cake in a 350-degree oven for 40 minutes.
  6. Cool and frost if desired.

 

 

 

Spicy Christmas Cake

Ingredients:

  • 2 cups of brown sugar
  • 1 1/3 cups of butter
  • 1 tbsp of orange peel, grated
  • 1 tbsp of lemon peel, grated
  • 2 tsp of vanilla extract
  • 2 tbsp of baking soda
  • 4 eggs
  • 1 tsp of cinnamon
  • 1 tsp of nutmeg
  • 1 cup of zucchini, grated
  • 1 cup of carrot, grated
  • 1/4 cup of ginger root, grated
  • 1 cup of pecans, chopped
  • 1 cup of walnuts, chopped
  • 1/2 cup of raisins

Directions:

  1. Combine all the ingredients into a blender and mix on a medium-high speed for 5 minutes.
  2. Pour the cake batter into greased bread pans and into a 325-degree oven for 45 minutes.
  3. Make a frosting.
    • Combine 2 cups of powdered sugar with 1 tsp of orange extract
    • Slowly beat in one package of cream cheese.
    • Add milk if the frosting is too thick.
  4. Frost the cake.
