Mama's Kitchen Dilemmas



Carmel Apple Drops

Ingredients:

  • 1 2/3 cup of brown sugar
  • 1 egg
  • 1/2 cup of shortening
  • 2 1/2 cups of flour
  • 1 tsp of ground cloves
  • 1 1/2 cups of apples, peeled and grated
  • 1/2 tsp of nutmeg
  • 1/2 tsp of salt
  • 2 tsp of cinnamon
  • 1 cup of white raisins
  • 1 cup of walnuts, chopped

Icing:

  • 1/4 cup of butter
  • 1/4 cup of brown sugar
  • 1/4 tsp of salt
  • 2 tbsp of half and half cream
  • 1/2 cup of confectionary sugar

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix together the shortening, egg and sugar for five minutes. (Wet ingredients)
  3. Mix together the brown sugar, flour, cloves, apples, nutmeg, salt, cinnamon, white raisins, and walnuts. (Dry ingredients)
  4. Add the dry ingredients to the wet ingredients and mix well
  5. Place tablespoon-size scoops of the dough on a baking sheet.
  6. Place them in a 350-degree oven for 11 minutes.
  7. Make the icing:
    • Cook the butter and brown sugar in a pan until the sugar dissolves.
    • Add the confectionary sugar, salt and slowly beat in the half and half.
  8. Drizzle the caramel icing over top the cookies.
  9. Allow to cool.

Makes: 42 cookies

 

 

 

Cashew Cookies

Ingredients:

  • 1 cup of packed brown sugar
  • 1 egg
  • 1/2 cup of butter
  • 2 cups of whole cashews
  • 1/3 cup of sour cream
  • 1/2 tsp of vanilla
  • 2 cups of flour
  • 2/3 tsp of baking powder
  • 2/3 tsp of baking soda

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine the butter, sugar, egg and vanilla.
  3. Fold in the egg, whole cashews, sour cream, flour, baking powder and baking soda.
  4. Blend well in an electric mixer for 5 minutes.
  5. Drop tablespoon-size scoops of dough on a cookie sheet
  6. Bake in a 350 -degree oven for 8-10 minutes.

Makes: 3 1/2 dozen cookies
