Carmel Apple Drops
Ingredients:
- 1 2/3 cup of brown sugar
- 1 egg
- 1/2 cup of shortening
- 2 1/2 cups of flour
- 1 tsp of ground cloves
- 1 1/2 cups of apples, peeled and grated
- 1/2 tsp of nutmeg
- 1/2 tsp of salt
- 2 tsp of cinnamon
- 1 cup of white raisins
- 1 cup of walnuts, chopped
Icing:
- 1/4 cup of butter
- 1/4 cup of brown sugar
- 1/4 tsp of salt
- 2 tbsp of half and half cream
- 1/2 cup of confectionary sugar
Directions:
- Preheat oven to 350 degrees F.
- Mix together the shortening, egg and sugar for five minutes. (Wet ingredients)
- Mix together the brown sugar, flour, cloves, apples, nutmeg, salt, cinnamon, white raisins, and walnuts. (Dry ingredients)
- Add the dry ingredients to the wet ingredients and mix well
- Place tablespoon-size scoops of the dough on a baking sheet.
- Place them in a 350-degree oven for 11 minutes.
- Make the icing:
- Cook the butter and brown sugar in a pan until the sugar dissolves.
- Add the confectionary sugar, salt and slowly beat in the half and half.
- Drizzle the caramel icing over top the cookies.
- Allow to cool.
Makes: 42 cookies
Cashew Cookies
Ingredients:
- 1 cup of packed brown sugar
- 1 egg
- 1/2 cup of butter
- 2 cups of whole cashews
- 1/3 cup of sour cream
- 1/2 tsp of vanilla
- 2 cups of flour
- 2/3 tsp of baking powder
- 2/3 tsp of baking soda
Directions:
- Preheat oven to 350 degrees F.
- Combine the butter, sugar, egg and vanilla.
- Fold in the egg, whole cashews, sour cream, flour, baking powder and baking soda.
- Blend well in an electric mixer for 5 minutes.
- Drop tablespoon-size scoops of dough on a cookie sheet
- Bake in a 350 -degree oven for 8-10 minutes.
Makes: 3 1/2 dozen cookies
