Mama's Kitchen Dilemmas



Amaretto Cookies

Ingredients:

  • 2 cups of flour
  • 1 egg white, beaten
  • 1 egg, separated
  • 1/4 tsp of salt
  • 1 cup of brown sugar
  • 1 cup of melted butter
  • 1 tbsp of amaretto liquor
  • 1 1/2 tsp of grated orange rind.

Directions:

  1. Preheat oven to 300 degrees F.
  2. Mix the flour, salt and sugar.
  3. Add the butter, egg yolk, orange rind, and amaretto liquor.
  4. Mix all the ingredients well.
  5. Spread the dough flat on a greased cookie sheet.
  6. Coat the dough with the beaten egg white.
  7. Place the dough in a 300-degree oven for 45 minutes.
  8. Cut into squares while still warm and store in a cool dark place.

 

 

 

Toffee Treats

Ingredients:

  • 1 cup of packed brown sugar
  • 1 cup of butter
  • 1/4 tsp of salt
  • 1 egg yolk
  • 1/2 tsp of vanilla
  • 1 cup of wheat flour
  • 1/2 cup of crushed and chopped walnuts, toasted
  • 1 (8oz) bag of semi sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees F.
  2. Blend together the butter, sugar, salt, vanilla, and egg yolk.
  3. Add the flour and beat well.
  4. Add the dough to a shallow and greased baking pan.
  5. Bake in a 350-degree oven for 15 minutes.
  6. Remove and add the walnut and chocolate chips.
  7. Smear them about with a spatula on top of the hot browned dough.
  8. Cut the dough into diamonds while still warm.

Makes: 40 cookies
