Mama's Kitchen Dilemmas



Almond Cookies

Ingredients:

Dough:

  • 2/3 cup of sugar
  • 4 cups of flour
  • 2 sticks of butter
  • 1 tsp of salt
  • 1 tsp of baking powder

Filling:

  • 3 cups of almonds
  • 1 cup of honey
  • 1/2 tsp of cinnamon

Directions:

  1. Preheat oven to 350 degrees F.
  2. Make the dough: combine the flour, sugar, baking powder and salt in a blender.
  3. Add the butter and eggs.
  4. Mix the dough well. Refrigerate the dough
  5. Make the filling: crush or finely chop the almonds. Add the honey and cinnamon and mix well.
  6. Roll the dough into 8 parts.
  7. Roll each dough part out so they are long 12 -inch strips.
  8. On four of the strips add the filling, place 6 healthy dollops of filling an inch apart from each other.
  9. Place the other four strips on top and seal in the filling with your thumb and four-finger.
  10. Separate the strip into six parts.
  11. Back them in a 350-degree oven for 15 minutes.
  12. Drizzle them with honey and store in a cool place.

Makes: 24 cookies

 

 

 

Eggnog Bites

Ingredients:

  • 1/2 cup of eggnog
  • 1/2 tsp of nutmeg
  • 1 tsp of baking powder
  • 2 egg yolks
  • 2 1/2 cups of flour
  • 1 1/2 cups of sugar
  • 1 tsp of vanilla

Directions:

  1. Preheat oven to 300 degrees F.
  2. Mix together nutmeg, baking powder, flour, and sugar. (Dry ingredients)
  3. In a separate bowl, mix together, eggnog, egg yolks, and vanilla. (Wet ingredients)
  4. Combine the dry and wet ingredients and mix together in an electric blender.
  5. Drop teaspoon size drops of dough onto a cookie sheet.
  6. Bake in a 300-degree oven for 20-24 minutes.
  7. Store eggnog bites in a cool place.
