Mama's Kitchen Dilemmas


 

Zesty Crockpot Chili

Ingredients:

  • 1 1/4 lbs of lean hamburger meat
  • 1 green bell pepper, chopped
  • 2 onions, chopped
  • 3 cloves of garlic, minced
  • 2 1/2 cans of whole peeled tomatoes
  • 3 tbsp of olive oil
  • 2 1/2 cans of kidney beans
  • 1 can of tomato soup
  • 1 1/2 tbsp of chili powder
  • 2 tsp of cumin
  • 2 tbsp of hot red pepper flakes

Directions:

  1. Simmer the onions, garlic, bell pepper, pepper flakes and olive oil on high in the crockpot for 5 minutes.
  2. Add the hamburger and brown it.
  3. Add the cumin and chili powder.
  4. Stir in the remaining ingredients and simmer on low for 9 hours.

 

 

 

Crockpot Meatballs

Ingredients:

  • 1 3/4 lbs of ground round
  • 1 cup of crushed Ritz crackers
  • 1/2 cup of ground pork
  • 1 onion, chopped
  • 2 eggs
  • 1/3 cup of ketchup
  • 1 tbsp of brown sugar
  • 1 can of cranberry sauce
  • salt and pepper
  • 2 cans of whole peeled tomatoes
  • 1 clove of garlic
  • 1 onion chopped

Directions:

  1. Mix the meat with the eggs, Ritz crackers, and ketchup.
  2. Roll the mixture into small balls and brown them in a pan in 3 tbsp of olive oil.
  3. Add the other ingredients to the crockpot and simmer for 4 hours.
  4. Add the meatballs and simmer on low for another 2 hours.

 

 

 

Crockpot Pork and Black Bean Chili

Ingredients:

  • 1 can of white northern beans, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 2 (16 oz) cans of whole peeled tomatoes
  • 2 cans of black beans
  • 3 fatty pork steaks, cubed
  • 2 cups of vegetable stock
  • 1 tbsp of white wine
  • 1 tbsp of brown sugar
  • salt and pepper to taste
  • 1 tbsp of parsley , chopped

Directions:

  1. Add all the ingredients to a crockpot and simmer on low for 6 hours.
