Zesty Crockpot Chili
Ingredients:
- 1 1/4 lbs of lean hamburger meat
- 1 green bell pepper, chopped
- 2 onions, chopped
- 3 cloves of garlic, minced
- 2 1/2 cans of whole peeled tomatoes
- 3 tbsp of olive oil
- 2 1/2 cans of kidney beans
- 1 can of tomato soup
- 1 1/2 tbsp of chili powder
- 2 tsp of cumin
- 2 tbsp of hot red pepper flakes
Directions:
- Simmer the onions, garlic, bell pepper, pepper flakes and olive oil on high in the crockpot for 5 minutes.
- Add the hamburger and brown it.
- Add the cumin and chili powder.
- Stir in the remaining ingredients and simmer on low for 9 hours.
Crockpot Meatballs
Ingredients:
- 1 3/4 lbs of ground round
- 1 cup of crushed Ritz crackers
- 1/2 cup of ground pork
- 1 onion, chopped
- 2 eggs
- 1/3 cup of ketchup
- 1 tbsp of brown sugar
- 1 can of cranberry sauce
- salt and pepper
- 2 cans of whole peeled tomatoes
- 1 clove of garlic
- 1 onion chopped
Directions:
- Mix the meat with the eggs, Ritz crackers, and ketchup.
- Roll the mixture into small balls and brown them in a pan in 3 tbsp of olive oil.
- Add the other ingredients to the crockpot and simmer for 4 hours.
- Add the meatballs and simmer on low for another 2 hours.
Crockpot Pork and Black Bean Chili
Ingredients:
- 1 can of white northern beans, drained and rinsed
- 1 can of kidney beans, drained and rinsed
- 2 (16 oz) cans of whole peeled tomatoes
- 2 cans of black beans
- 3 fatty pork steaks, cubed
- 2 cups of vegetable stock
- 1 tbsp of white wine
- 1 tbsp of brown sugar
- salt and pepper to taste
- 1 tbsp of parsley , chopped
Directions:
- Add all the ingredients to a crockpot and simmer on low for 6 hours.
