Crockpot Yellow Curry
Ingredients:
- 3 tbsp of yellow curry paste
- 2 stalks of lemon grass, bruised
- 2 onions, chopped
- 2 cloves of garlic, minced
- 1 tbsp of sesame oil
- 1 tsp of fish sauce
- 1 tbsp of hot chili sauce
- 1 tbsp of butter
- 2 cans of coconut milk
- 1 cup of carrots, chopped and sautéed in olive oil and garlic
- 2 cups of potatoes, chopped
- 1 large bunch of coriander, chopped
- 3/4 cup of ginger, shredded
- 3 cups of vegetable stock
- rice
Directions:
- Simmer the ginger, onion and garlic in the sesame oil for 10 minutes.
- Add the remaining ingredients and cook them on low for 7-8 hours.
- Serve with rice.
Crockpot Green Curry
Ingredients:
- 3 tbsp of green curry paste
- 2 stalks of lemon grass, bruised
- 2 onions, chopped
- 2 limes, squeezed
- 2 cloves of garlic, minced
- 1 tbsp of sesame oil
- 1 tsp of fish sauce
- 1 tbsp of hot chili sauce
- 2 cans of coconut milk
- 1 eggplant, cubed and seared in olive oil and garlic
- 1 large bunch of coriander, chopped
- 3/4 cup of ginger, shredded
- 3 cups of vegetable stock
- rice
Directions:
- Simmer the ginger, onion and garlic in the sesame oil for 10 minutes.
- Add the remaining ingredients and cook them on low for 6 hours.
- Serve with rice.
Crockpot Red Curry
Ingredients:
- 3 tbsp of red curry paste
- 2 stalks of lemon grass, bruised
- 2 onions, chopped
- 2 cloves of garlic, minced
- 1 tbsp of sesame oil
- 1 tsp of fish sauce
- 1 tbsp of hot chili sauce
- 2 cans of coconut milk
- 1 plantain, peeled and cubed
- 2 cups of potatoes, peeled and cubed
- 1 large bag of spinach
- 1 large bunch of coriander, chopped
- 3/4 cup of ginger, shredded
- 3 cups of vegetable stock
Directions:
- Simmer the ginger, onion and garlic in the sesame oil for 10 minutes.
- Add the remaining ingredients and cook them on low for 6-7 hours.
- Serve with rice.
