Crockpot Red Cabbage Bake

Ingredients:

  • 1 large head of red cabbage, chopped
  • 1 large onion, chopped
  • 10 pieces of Swiss cheese
  • 1/2 cup of vegetable broth
  • salt and pepper to taste
  • 3 tbsp of olive oil

Directions:

  1. Layer the ingredients in the bottom of a crockpot.
  2. Simmer them on low for 4-5 hours.

 

 

 

Crockpot Enchilada Casserole

Ingredients:

  • 3 cups of chicken, boneless and skinless, shredded
  • 1 cup of Monterey Jack cheese
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 clove of garlic, minced
  • 10 flour tortillas
  • 1 cup of picante sauce
  • 1 cup of cheddar cheese

Directions:

  1. Layer the ingredients in a crockpot and simmer on low for 8 hours.

 

 

 

Crockpot Swiss Steak

Ingredients:

  • 2 lbs of round steak, cut into pieces
  • 1 1/2 tbsp of flour
  • 1 1/2 onions, chopped
  • salt and pepper
  • 2 cups of tomato sauce
  • 1 cup of carrots, chopped
  • 1 cup of celery, chopped
  • 1/2 cup of vegetable stock

Directions:

  1. Mix all the ingredients together and simmer on low for 9 hours.
