Crockpot Corn Chowder

Ingredients:

  • 2 cans of cream of celery soup
  • 1 liter of chicken stock
  • 1 can of creamed corn
  • 2 tbsp of butter
  • 3 potatoes, cubed
  • 2 scallions, chopped
  • 1 tbsp of parsley
  • 1 cup of heavy cream
  • 1 onion, chopped
  • 1 rib of celery, chopped
  • salt and pepper to taste

Directions:

  1. Simmer all the ingredients on low in a crockpot for 7-8 hours.

 

 

 

Crockpot Pesto Chowder

Ingredients:

  • 3 cans of cream of potato soup
  • 1 liter of vegetable stock
  • 4 tbsp of pesto
  • 3 potatoes, peeled and cubed
  • 1 stick of butter
  • salt and pepper to taste
  • 1 onion, chopped
  • 1 cup of heavy cream

Directions:

  1. Simmer all the ingredients on low, stirring occasionally, for 5 hours.

 

 

 

Crockpot Vegetable Potato Chili

Ingredients:

  • 1 can of whole, peeled tomatoes
  • 2 zucchini, chopped
  • 2 celery ribs, chopped
  • 2 onions, chopped
  • 1 tsp of cumin
  • salt and pepper to taste
  • 1 can of garbanzo beans
  • 1 can of kidney beans
  • 3 carrots, peeled and chopped
  • 1 bell pepper, chopped
  • 1 can of corn
  • 2 tsp of chili powder
  • 1 jar of salsa
  • 1/2 cup of tomato paste
  • 1 cup of chicken stock

Directions:

  1. Simmer all the ingredients in a crockpot on low for 8-10 hours.
  2. Serve with crackers and a dollop of sour cream.
