Crockpot Pork and Black Eyed Peas

Ingredients:

  • 1 pork rump, small
  • 1 cup of onion, chopped
  • 1 cup of carrots, chopped
  • 1 cup of celery, chopped
  • 7 cups of vegetable stock
  • 2 tbsp of thyme
  • 3 tbsp of olive oil
  • 2 potatoes, peeled and cubed
  • 2 sweet potatoes, peeled and cubed
  • salt and pepper

Directions:

  1. Add all the ingredients to a crockpot and simmer on low for 10 hours.

 

 

 

Crockpot Turkey Loaf

Ingredients:

  • 1 pre-made turkey loaf
  • 1 1/2 cups of water
  • 1 tsp of olive oil
  • 1 1/2 cups of BBQ sauce
  • cole slaw

Directions:

  1. Simmer the turkey loaf in a crockpot with the water and oil for 12 hours.
  2. After 12 hours, mash the loaf with a masher, adding the BBQ sauce.
  3. Serve on a bun like a Sloppy Joe.

 

 

 

Crockpot Italian Lentils

Ingredients:

  • 1 1/2 bags off lentils
  • 9 cups of vegetable broth
  • 5 tbsp of olive oil
  • 1/4 cup of white wine
  • 3 garlic cloves, chopped
  • 2 onions, chopped
  • 1 rib of celery, chopped
  • salt and pepper to taste

Directions:

  1. Simmer the onion, garlic and celery in the olive oil and white wine for 10 minutes.
  2. Add the remaining ingredients and cook them on low for 9 hours.
