Lima Bean Stew
Ingredients:
- 2 1/2 quarts of water
- 1 1/2 cups of baby lima beans, dried, soaked overnight in 7 cups of cold water
- 11 carrots, peeled and chopped
- 2 tbsp of salt
- 1 small (2) pound chicken
- 3 cloves of garlic, chopped
- 3 ribs of celery
- 2 onions, chopped
- 3/4 cup of barley
- 1 tsp of celery salt
- 1 tbsp of flour
- 3 tbsp of olive oil
Directions:
- Simmer all the ingredients on high in the crockpot, except for the chicken, for one hour.
- Add the chicken and simmer on low for 5-8 hours.
- Remove the chicken, peel the meat away from the bones and return the meat to the soup.
Crockpot Chicken Stew
Ingredients:
- 2 liters of chicken broth
- 1 tbsp of paprika
- 1 tsp of corn starch
- 5 sage leaves
- 1 bay leaf
- salt and pepper to taste
- 2 tbsp of flour
- 2 tbsp of butter
- 4 chicken breasts, boneless, skinless and cubed
- 1 onion, chopped
- 1 rib of celery, chopped
- 1 turnip, chopped
- 3 potatoes, peeled and cubed
- 1 cup of carrots
- 1/2 tbsp of thyme
- 4 tomatoes, chopped
Directions:
- Add all the ingredients to a crockpot and simmer them on low for 8-9 hours.
Crockpot Wild West Stew
Ingredients:
- 3 potatoes, peeled and cubed
- 3 chicken breasts, boneless, skinless and shredded
- 1 package of taco seasoning powder
- 1 can of salsa, hot
- 2 tbsp of olive oil
- 2 chilies, diced
- 1 can of whole peeled tomatoes
- 1 liter of vegetable stock
- salt and pepper to taste
- 1 tsp of hot pepper flakes
- 2 cups of squash, cubed
- 1 tsp of cornstarch
Directions:
- Add all the ingredients to a crockpot and simmer on low all day.
- Add a cup of cooked rice if desired.
