Crockpot Cous Cous
Ingredients:
- 2 1/2 cups of cous cous
- 1 can of stewed tomatoes
- 1 leek, chopped
- 1 can of chickpeas, strained and washed
- 2 cloves of garlic, chopped
- 2 cups of red and yellow bell peppers, chopped
- fresh basil and oregano
- salt and pepper
Directions:
- Add all the ingredients to the crockpot, except for the cous cous.
- Simmer on high for 1 hour.
- Add the cous cous and simmer on low for 2 hours.
Crockpot Salsa Dip
First step ingredients
- 2 (8 oz) cans of stewed tomatoes
- 4 cloves of garlic, chopped
- 1 onion, chopped
- 4 jalapeno peppers, chopped
- 2 tbsp of cilantro, freshly chopped
- 6 Roma tomatoes, chopped
Second step ingredients
- 1 lb of ground beef
- 1 onion, chopped
- 2 1/2 lbs of Velveeta cheese
- 1/4 cup of cream
- 1 can of cream of broccoli soup
Directions:
- Add the first step ingredients and simmer for 2 hours.
- Add the second step ingredients and simmer on low for another 3 hours.
- Serve with tortilla chips.
Crockpot Beef Stew
Ingredients:
- 1 1/2 lb cut of beef
- 4 cups of beef stock
- 1 1/4 lbs of mushrooms, washed and chopped
- 3 tbsp of flour
- 1 1/2 onions, chopped
- 1 can of tomato paste
- 2 turnips, chopped
- 1 parsnip, chopped
- 3 carrots, chopped
- 1 cup of frozen peas
- 2 sweet potatoes, peeled and chopped
- 3 cloves of garlic, chopped
- salt and pepper
Directions:
- Add all the ingredients to a crockpot and simmer them on low for 7 hours.
- Add salt and pepper to taste.
