Crockpot Beef Vegetable Soup
Ingredients:
- 2 cups of vegetable juice
- 2 cups of vegetable stock
- 2 tbsp of beef stock powder
- salt and pepper
- 3 bag of mixed frozen vegetables
- 1 onion, chopped
- 2 potatoes, peeled and chopped
- 1 1/2 lbs of a beef cut, cubed
Directions:
- Add all the ingredients to a crockpot and simmer them on low for 8 1/2 hours.
Crockpot Beef Taco Soup
Ingredients:
- 1 1/2 lbs of ground beef
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 can of corn, washed and strained
- 1 can of black beans, washed and strained
- 1 can of whole peeled tomatoes
- 2 tbsp of olive oil
- 2 packs of taco seasoning mix
Directions:
- Sautee the beef in the olive oil, garlic and onion for five minutes.
- Add the remaining ingredients and simmer on low for 6 hours.
Crockpot New Orleans Soup
Ingredients:
- 30 small sausage meatballs
- 2 cans of whole peeled tomatoes
- 1 cup of rice, cooked
- 2 jalapenos, chopped
- 1 onion, chopped
- 2 cups of shrimp
- 1 cup of oysters
- 2 cloves of garlic, chopped
- 1/4 cup of cilantro, chopped
- 3 cups of spinach
- 1 1/2 liters of vegetable stock
- salt and pepper to taste
- 1 carrot, chopped
- 1 rib of celery, chopped
Directions:
- Add all the ingredients to a crockpot and simmer them on low for 10 hours.
