Mozzarella Spinach Chicken

Ingredients:

  • 4 chicken breasts, boneless, skinless and tenderized
  • 2 mozzarella balls, sliced
  • 8 large spinach leaves
  • 1 clove of garlic
  • Olive oil
  • Salt and pepper
  • 1 ½ cups of breadcrumb mix made with equal parts of breadcrumbs and parmesan. Add rosemary, salt and pepper.
  • 1 lemon

Directions:

  1. Preheat oven to 300 degrees F.
  2. Rub the chicken breasts with olive oil and garlic, salt and pepper.
  3. Place a layer of spinach and mozzarella on top.
  4. Fold them in half.
  5. Bread the chicken breasts, beginning with flour, then egg and bread crumb mix.
  6. Brown the chicken breasts with oil in a pan on a medium heat.
  7. Place chicken breasts on a baking sheet.
  8. Squeeze a lemon on the chicken breasts and place them in a 300 degree oven for 10 minutes.

Serves: 4 persons

 

 

 

Orange and Paprika Chicken

Ingredients:

  • 4 chicken breasts, boneless, skinless and tenderized
  • 2 tbsp of olive oil
  • 1 tbsp of sweet paprika
  • 2 oranges, washed and sliced; do not remove the peel.
  • salt and pepper
  • 2 tbsp of white wine

Directions:

  1. Preheat oven to 300 degrees F.
  2. Rub the chicken with olive oil, salt and pepper.
  3. Sprinkle both sides of the breasts with paprika.
  4. Layer the chicken breasts with the orange slices in a baking dish.
  5. Add the white wine.
  6. Cover the baking dish with foil and bake in 300 degree oven for 10-15 minutes.
