Orange Marmalade Chicken


  • 4 chicken breasts, boneless, skinless and cut into pieces the size of a dime
  • 1/3 cup of orange marmalade
  • 5 tbsp of white wine
  • Salt and pepper
  • 8-10 wooden skewers
  • Olive oil


  1. Preheat oven to 300 degrees F.
  2. Rub olive oil on the wooden skewers.
  3. Stab the small pieces on chicken breast on to the skewers.
  4. Place them into a backing dish.
  5. Mix together the white wine and marmalade.
  6. Pour over top of the chicken breasted skewers.
  7. Add salt and pepper to taste.
  8. Place the backing dish into a 300 degree oven for 10-12 minutes.

Serves: 4 persons




Rosemary Chicken


  • 4 chicken thighs with the skin and bone
  • 4 chicken drums
  • 1 cup of fresh rosemary
  • 4 tbsp of white wine
  • 2 tbsp of olive oil


  1. Preheat oven to 300 degrees F.
  2. Run the chicken meat under the skin with oil.
  3. Stuff the cavity between the skin and the meat with the rosemary.
  4. Place the chicken drums and thighs in a baking dish.
  5. Pour the white wine over them and add salt pepper.
  6. Place the baking dish in the oven for 15-20 minutes at 300 degrees.

Serves: 4-5 persons
