Lemon Mustard Chicken

Ingredients:

  • 2 tbsp. mustard
  • 2 tbsp. balsamic vinegar dressing
  • 3 tbsp. lemon juice
  • 1 tsp. paprika
  • lemon pepper to taste
  • 4 small skinless boneless chicken breasts

Directions:

  1. Mix first five ingredients.
  2. Add chicken breast and let it marinate for at least 30 minutes in refrigerator.
  3. Place marinated chicken on grill and let cook until no longer pink in middle and juices run clear.

Serves: 4 persons

 

 

Onion Chicken

Ingredients:

  • 1 1/3 c. fried onion toppers
  • 2 to 3 tbsp. Italian salad dressing
  • 4 boneless skinless chicken breasts

Directions:

  1. Preheat oven to 350 degrees F.
  2. Place fried onion toppers in bag and crush until fine.
  3. Transfer to sheet of wax paper.
  4. Spread Italian dressing evenly on chicken breasts.
  5. Coat chicken breasts with onion crumbs, pressing gently to make stick.
  6. Place in baking pan and bake 20 minutes or until chicken is no longer pink in the middle and juices run clear.
