Italian Chicken Nuggets
Ingredients:
- 3 large boneless, skinless chicken breasts, cut into short strips
- 2/3 cup of flour
- 2 eggs, whipped
- 1 cup of breadcrumbs
- 1/3 cup of Parmesan
- 2 tbsp of oregano
- salt and pepper
Directions:
- Preheat oven to 350 degrees F.
- Place two plates and one shallow bowl on a counter top. In the shallow bowl, beat two eggs.
- Dump the flour one of plates.
- On the other plate mix the breadcrumbs, Parmesan, oregano, salt and pepper.
- The breadcrumb mixture will be your assembly line for breading the chicken.
- Pass the chicken strips, through the flour, then the egg, and finally, the breadcrumb mixture.
- Place the breaded chicken strips on a baking sheet and bake in the oven for 10-15 minutes.
Serves: 4 persons
Broccoli Mandarin Chicken
Ingredients:
- 4 chicken breasts, cut into small pieces
- 3 mandarin oranges, peeled and separated into pieces
- 1 large head of broccoli, cut into small pieces
- 2 cups of basmati rice, cooked
- 1 small glove of garlic
- 1 tbsp of soy sauce
- 2 tbsp of sesame oil
- 1/3 cup of white wine
Directions:
- In a large pan, preferably a wok, add the garlic and sesame oil.
- Simmer for 1 minute.
- Add the broccoli and mandarins, chicken, soy and white wine.
- Simmer on a medium heat until the broccoli is tender.
- Serve over top the rice.
Serves: 4 persons
