Indian Chicken

Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 1 cup of yogurt
  • 3 tbsp of fresh, chopped coriander
  • 1 tbsp of cumin
  • 1 tbsp of red curry powder
  • 1 tsp of hot pepper flakes, pulverized
  • salt and pepper
  • 1 tsp of lemon peel, grated

Directions:

  1. Preheat the oven to 300 degrees F.
  2. Mix yogurt, coriander, cumin, curry powder, hot pepper flakes and lemon rind in a small bowl.
  3. Place the chicken breasts in a baking pan.
  4. Pour the yogurt mixture on the chicken and massage them for 30 seconds.
  5. Place in the refrigerator and allow to marinate for 30 minutes.
  6. Place the chicken in the oven and bake them for 15-20 minutes.

Serves: 4 persons

 

 

 

Lemon Baked Chicken

Ingredients:

  • 4 chicken breasts, boneless, skinless and tenderized
  • 2 lemons, sliced thinly
  • salt and pepper
  • 1 garlic clove, diced
  • 2 tbsp of white wine

Directions:

  1. Preheat the oven to 300 degrees
  2. In a baking pan, place alternating layers of chicken breast, lemon slices and seasonings: salt, pepper and garlic.
  3. Pour into the pan the white wine.
  4. Cover the pan with aluminum foil and place in the oven for 15-20 minutes.

Serves: 4 persons
