Indian Chicken
Ingredients:
- 4 chicken breasts, boneless and skinless
- 1 cup of yogurt
- 3 tbsp of fresh, chopped coriander
- 1 tbsp of cumin
- 1 tbsp of red curry powder
- 1 tsp of hot pepper flakes, pulverized
- salt and pepper
- 1 tsp of lemon peel, grated
Directions:
- Preheat the oven to 300 degrees F.
- Mix yogurt, coriander, cumin, curry powder, hot pepper flakes and lemon rind in a small bowl.
- Place the chicken breasts in a baking pan.
- Pour the yogurt mixture on the chicken and massage them for 30 seconds.
- Place in the refrigerator and allow to marinate for 30 minutes.
- Place the chicken in the oven and bake them for 15-20 minutes.
Serves: 4 persons
Lemon Baked Chicken
Ingredients:
- 4 chicken breasts, boneless, skinless and tenderized
- 2 lemons, sliced thinly
- salt and pepper
- 1 garlic clove, diced
- 2 tbsp of white wine
Directions:
- Preheat the oven to 300 degrees
- In a baking pan, place alternating layers of chicken breast, lemon slices and seasonings: salt, pepper and garlic.
- Pour into the pan the white wine.
- Cover the pan with aluminum foil and place in the oven for 15-20 minutes.
Serves: 4 persons
