Coriander Chicken

Ingredients:

  • 5 tbsp of freshly chopped coriander
  • 4 chicken breasts, boneless, skinless and diced
  • 1 lime, squeezed for lime juice
  • 1 tbsp of fish sauce
  • 1 tbsp of sesame oil
  • 3 garlic cloves, grated
  • 1 tsp of soy sauce
  • 1 tsp of brown sugar
  • white rice

Directions:

  1. Sautee the garlic in the sesame oil over a low heat.
  2. Add 3 tbsp of coriander and simmer for 2 minutes.
  3. Add 3 tbsp of coriander, the fish sauce and chicken, the soy sauce and sugar and simmer everything for 5 minutes.
  4. Squeeze a lime over the chicken and simmer for 2 minutes.
  5. Serve with white rice.

Serves: 4 persons

 

 

 

Southern Fried Chicken

Ingredients:

  • 4 chicken thighs
  • 4 chicken wings
  • 2 cups of heavy cream
  • 2 tbsp of chili flakes
  • 2 cloves of garlic, chopped
  • 2 tbsp of coriander, chopped
  • 2 shallots, chopped
  • salt
  • 7 tbsp of flour
  • 1/2 tsp of paprika
  • 1 tsp of cayenne pepper
  • olive oil

Directions:

  1. Marinade the chicken legs and wings overnight in the heavy cream, garlic, coriander, salt and chili flakes.
  2. Heat a shallow pool of olive oil in a pan.
  3. Make the coating for the chicken by mixing the flower, pepper, paprika and tsp of salt.
  4. Pass the marinated chicken legs and wings through the flour coating and fry them in the oil.
  5. Place the fried chicken on a plate lined with a paper towel. This will help absorb some of the excess oil on the chicken.

Serves: 4 persons
