Grilled chicken sandwiches

Ingredients:

  • 4 chicken breasts, boneless, skinless, tenderized and grilled or boiled
  • 1 avocado, sliced
  • 1 red bell pepper, grilled
  • 4 tbsp of curry mayonaisse
  • 4 toasted buns, preferrably an artisn bread
  • 1 tomato, sliced
  • 1 red onion, grilled
  • salt and pepper

Directions:

  1. Assemble the sandwiches.
  2. Add to the bun, the curry mayonaisse, the avocado, then bell pepper, chicken breast, tomato and grilled onion.
  3. Add salt and pepper to taste.
  4. Stab the sandwiches with toothpicks to hold them together.

Serves: 4 persons

 

 

 

Apricot and almond baked chicken

Ingredients:

  • 6 chicken legs
  • 5 apricots, sliced
  • 20 grapes, halved
  • 1/2 cup of almonds, chopped
  • 1/2 cup of dry white wine
  • 4 tbsp of olive oil
  • salt and pepper
  • 1 tsp of coriander

Directions:

  1. Preheat oven to 325 degrees F.
  2. Add all ingredients to a baking dish.
  3. Marinate the chicken in the ingredients for 2 hours.
  4. Place the baking pan in a 325-degree oven for 10-15 minutes.

Serves: 4-6 persons
