Chicken Salad Sandwiches


  • 6 oz. canned chicken breast chunks
  • 3 tbsp. light or fat-free mayonnaise
  • ¼ c. green seedless grapes (halved)
  • 2 tsp. finely-chopped walnuts
  • Wheatberry bread


  1. Stir all ingredients in a medium bowl
  2. Serve on wheatberry bread




Grilled chicken salad


  • 3 cups. green leaf lettuce
  • small chicken breast (3 oz.), grilled and sliced into thin strips
  • Hard-boiled egg, sliced
  • ½ of a small tomato, diced
  • 1/8 c. mushroom slices
  • 1 tbsp. bacon bits
  • 1/8 c. low-fat or fat-free parmesan cheese
  • 2 tbsp. light or fat-free dressing of your choice


  1. Layer all ingredients in order listed and serve.
