Bacon-wrapped Chicken

Ingredients:

  • 4 chicken breasts, boneless, skinless, and tenderized
  • 4 large basil leaves
  • 1 large ball of mozzarella, sliced
  • 12 strips of bacon
  • salt and pepper
  • olive oil
  • toothpicks

Directions:

  1. Preheat oven to 400 degrees F.
  2. Rub the chicken with oil, salt and pepper.
  3. Place a piece of basil and a slice of mozzarella on one half of the chicken breast.
  4. Fold the other half over top the mozzarella and basil.
  5. Wrap the fold chicken breast with three strip of bacon and affix them with toothpicks to the chicken breast. This will also keep the fold closed.
  6. Place the chicken breasts on a baking sheet and in a pre-heated oven, 400-degree oven for 15 minutes.

Serves: 4 persons

 

 

 

Cottage Chicken Enchiladas

Ingredients:

  • 2 cups of chicken breast, boiled and shredded
  • 1 onion, chopped
  • 1 hot chili pepper, chopped
  • 1 1/2 cups of cottage cheese
  • 10 soft or hard shell corn tortillas
  • 1 package of El Paso taco seasoning
  • 1/2 cup of plain white yogurt
  • 1 1/2 cups of shredded sharp cheddar cheese
  • salt and pepper
  • 1 tbsp of olive oil

Directions:

  1. Sautee the onion and pepper in the olive oil for 2 minutes.
  2. Add the chicken and taco seasoning.
  3. Cook for another 3 minutes.
  4. Set aside.
  5. Blend the yogurt, shredded cheese and cottage cheese together.
  6. Scoop the chicken mixture in the tacos.
  7. Add the scoop of the cheese mixture to the tacos.
  8. Place the tacos on a baking sheet and into a 300-degree oven for 7 minutes.
