Sweet potato casserole

Ingredients:

  • 3 c. mashed sweet potatoes (use fresh and baked ahead or canned, drained)
  • 1 c. Splenda
  • 2 egg substitutes
  • 1 tsp. vanilla
  • 1/2 c. margarine
  • 1/2 c. skim milk

Topping:

  • 1 c. brown sugar
  • 1/2 c. flour
  • 1/2 c. margarine

Directions:

  1. Preheat oven to 350 degrees F.
  2. Add all ingredients to potatoes and mix well.
  3. Pour into a casserole dish and add topping.
  4. Bake at 350 degrees for 45 minutes.

 

 

 

Grandma's Squash casserole

Ingredients:

  • 2 c. squash, cooked
  • 1 carrot, grated
  • 1 med. onion, chopped
  • 1 c. light sour cream
  • 1 can low-fat, low-sodium cream of chicken soup
  • Salt & pepper to taste
  • Margarine
  • 1/2 c. low-fat or fat-free shredded cheese
  • Stuffing mix

Directions:

  1. Thoroughly mix all ingredients except stuffing mix. Pour about 1/3 of bag of stuffing mix in casserole dish.
  2. Pour all other mixed ingredients over stuffing.
  3. Put remaining stuffing mix on top to thoroughly cover squash mixture.
  4. Dot with butter and bake at 350 degrees for 45 minutes.
