Potato and ham casserole

Ingredients:

  • 2 tbsp. margarine
  • 2 tbsp. flour
  • 2 tsp. salt
  • 2 c. skim milk
  • 6 c. raw sliced potatoes
  • 1-2 c. diced ham turkey ham

Directions:

  1. Preheat oven to 350 degrees F.
  2. Melt margarine, stir in flour and salt.
  3. Add milk slowly and stir until mixture thickens.
  4. Add potatoes slowly and continue to stir until mixture boils again.
  5. Add diced turkey ham.
  6. Put in greased casserole and bake at 350 degrees for 35 minutes or until potatoes are tender.

 

 

 

Spinach casserole

Ingredients:

  • 2 pkgs. frozen chopped spinach
  • 1 pkg. dry onion soup mix
  • 1 can mushroom soup
  • 1 c. low-fat or fat-free Cheddar cheese, grated
  • 1 c. low-fat or fat-free ricotta cheese

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cook spinach according to directions on box.
  3. Drain very well.
  4. Combine drained spinach with the onion soup mix, the mushroom soup and 1/2 cup of each kind of cheese.
  5. Put this mixture into greased casserole dish.
  6. Bake at 350 degrees for about 10 minutes to melt cheese.
  7. Combine remaining cheeses to top of casserole.
