Grits Casserole

Ingredients:

  • 4 c. water
  • 1 c. grits
  • 3 chicken bouillon cubes
  • 1 stick margarine
  • ½ c. low-fat or fat-free shredded Cheddar cheese
  • 2 egg substitutes

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cook water, grits and bouillon according to directions on grits box.
  3. Bring water to a boil and add grits and bouillon.
  4. Reduce heat to low, cover and cook for 5 minutes.
  5. Add margarine, cheese and egg substitutes.
  6. Mix well and pour into casserole dish.
  7. Bake for 1 hour at 350 degrees F.

 

 

 

South of the Border Breakfast Casserole

Ingredients:

  • 6 egg substitutes
  • 4 c. low-fat or fat-free shredded Cheddar cheese
  • 4 oz. can mild green chilies
  • ¼ c. bacon bits

Directions:

  1. Preheat oven to 350 degrees F.
  2. Spray a 9 x 9- in. baking dish with nonstick cooking spray.
  3. Spread green chilies on bottom of pan (do not drain chilies).
  4. Sprinkle cheese over the chilies and pour the egg substitutes over the cheese.
  5. Bake uncovered for 30 minutes or until firm at 350 degrees F.
  6. Cut into one-in. squares and top with the bacon bits before serving.
