Simply the best chocolate chip banana bread
Ingredients:
- 3 cups of buckwheat flour
- 1/2 tsp of salt
- 1 1/2 cups of semi-sweet chocolate chips
- 1/2 cup of walnuts, chopped
- 6 ripe bananas, mashed
- 2 eggs
- 2 cups of white sugar
- 1 cup of shortening
- 1 tsp of vanilla
- 1 tsp of baking powder
- 2 tsp of baking soda
Directions:
- Heat the oven to 350 degrees and grease a bread pan.
- Mix all the ingredients thoroughly, first the shortening and sugar, followed by the egg, banana and other dry ingredients.
- Pour the batter into bread pan (fill the pan half way).
- and place it in the oven for 50-60 minutes.
- Test: to see if the bread is cooked place a knife or a toothpick into the bread loaf to see if the ingredients are still raw.
Makes 2 medium size loaf pans
Serves: 8-10 people

Spice and pumpkin bread
Ingredients:
- 1/2 tsp of cinnamon,
- 3/4 cup of chopped walnuts
- 3/4 cup of raisins
- 1 cup of pumpkin, fresh or canned
- 1/3 cup of water
- 1/3 cup of butter
- 2 eggs, beaten
- 1 orange
- 1 1/4 cup of brown sugar
- 1 tsp of baking soda
- 2 tsp of baking powder
- ½ tsp of salt
- 2 cups of buckwheat flour
- 1 tsp of ginger powder
Directions:
- Heat the oven to 350 degrees and grease a bread pan.
- Quarter and orange, leaves the peel on, and remove the seeds.
- Place it in a food processor and process it on high speed for 30 seconds.
- Cream together the butter and sugar. Add the eggs, water.
- Add the dry ingredients last. Stir and mix the ingredients well.
- Pour the batter into the greased bread pan and place it in the oven for 50-60 minutes.
- Test: to see if the bread is cooked place a knife or a toothpick into the bread loaf to see if the ingredients are still raw.
Serves: 10-12 persons
