Simply the best chocolate chip banana bread

Ingredients:

  • 3 cups of buckwheat flour
  • 1/2 tsp of salt
  • 1 1/2 cups of semi-sweet chocolate chips
  • 1/2 cup of walnuts, chopped
  • 6 ripe bananas, mashed
  • 2 eggs
  • 2 cups of white sugar
  • 1 cup of shortening
  • 1 tsp of vanilla
  • 1 tsp of baking powder
  • 2 tsp of baking soda

Directions:

  1. Heat the oven to 350 degrees and grease a bread pan.
  2. Mix all the ingredients thoroughly, first the shortening and sugar, followed by the egg, banana and other dry ingredients.
  3. Pour the batter into bread pan (fill the pan half way).
  4. and place it in the oven for 50-60 minutes.
  5. Test: to see if the bread is cooked place a knife or a toothpick into the bread loaf to see if the ingredients are still raw.

Makes 2 medium size loaf pans

Serves: 8-10 people

Spice and pumpkin bread

Ingredients:

  • 1/2 tsp of cinnamon,
  • 3/4 cup of chopped walnuts
  • 3/4 cup of raisins
  • 1 cup of pumpkin, fresh or canned
  • 1/3 cup of water
  • 1/3 cup of butter
  • 2 eggs, beaten
  • 1 orange
  • 1 1/4 cup of brown sugar
  • 1 tsp of baking soda
  • 2 tsp of baking powder
  • ½ tsp of salt
  • 2 cups of buckwheat flour
  • 1 tsp of ginger powder

Directions:

  1. Heat the oven to 350 degrees and grease a bread pan.
  2. Quarter and orange, leaves the peel on, and remove the seeds.
  3. Place it in a food processor and process it on high speed for 30 seconds.
  4. Cream together the butter and sugar. Add the eggs, water.
  5. Add the dry ingredients last. Stir and mix the ingredients well.
  6. Pour the batter into the greased bread pan and place it in the oven for 50-60 minutes.
  7. Test: to see if the bread is cooked place a knife or a toothpick into the bread loaf to see if the ingredients are still raw.

Serves: 10-12 persons
