Super Bran Muffins

Ingredients:

  • 1 ½ cups bran cereal like All Bran
  • ¼ cup vegetable oil
  • ½ cup raisins
  • ½ cup boiling water
  • 1 egg, lightly beaten
  • 1 cup buttermilk
  • 2 tsp molasses
  • 1 cups whole wheat flour
  • 2 tsp. sugar
  • ¼ tsp. baking soda
  • ¼ tsp. salt

Directions:

  1. Preheat oven to 400 degrees.
  2. Combine bran cereal vegetable oil, raisins, and boiling water.
  3. Let it cool slightly.
  4. Add egg, buttermilk molasses and whole wheat flour to the bran cereal mixture.
  5. Combine the sugar, baking soda, and salt in a separate bowl, then add the first mixture to this one and mix.
  6. Cover mixture with a damp towel and let mixture stand for 15 minutes.
  7. Spoon the mixture into greased muffin cups until the cup is 3/4 full
  8. Bake for 20-25 minutes.
  9. After the muffins have cooled, remove them from the muffin cups and place them on a wire rack to prevent sticky bottoms.

Bran muffins

Ingredients

  • 2 c. boiling water
  • 6 c. bran cereal, divided
  • 1 c. margarine
  • 3 c. Splenda
  • 4 egg substitutes
  • 2 c. soured skim milk (mix with ¼ c. lemon juice or vinegar and 1
  • ¾ c. water
  • 5 c. flour
  • 5 tsp. baking soda
  • 2 tsp. salt

Directions

  1. Preheat oven to 400 degrees.
  2. Combine boiling water and bran cereal; set aside
  3. Cream margarine and Splenda in large mixing bowl; beat in egg substitutes.
  4. Add soured milk mixture and bran/water mixture to margarine mixture.
  5. Add flour, soda and salt and stir well.
  6. Stir in remaining bran cereal.
  7. Bake in greased muffin pans for 15-20 minutes at 400 degrees F.

Makes 48 muffins
