Chunky Banana Wheat Muffins

Ingredients:

  • ½ cup flour
  • ½ cup brown sugar
  • 1 tbs baking powder
  • 2 fresh bananas cut in chunks
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup wheat flour
  • 3/4 cup milk
  • 5 tsp melted butter

Directions:

  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix flour, brown sugar, baking powder, salt, cinnamon, and wheat flour.
  3. Add milk and melted butter to dry ingredients and mix until dry ingredients are moistened.
  4. Fold in banana chunks.
  5. Spray a 12 cup muffin pan with Pam.
  6. Fill muffin cups halfway full with mixture.
  7. Bake for 20-25 minutes.

Cherry Muffins

Ingredients:

  • 1 cup flour
  • ½ cup brown sugar
  • 1 tbs baking powder
  • 1 can sugar free pie cherries
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup wheat flour
  • 3/4 cup milk
  • 5 tsp melted butter

Directions:

  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix flour, brown sugar, baking powder, salt, cinnamon, wheat and flour.
  3. Add cherries, milk and butter to the dry ingredients and mix until dry ingredients are moistened.
  4. Spray a 12 cup muffin pan with Pam.
  5. Fill muffin cups halfway full with mixture.
  6. Bake for 20-25 minutes.
