Alcohol-free frozen melon margaritas
Ingredients:
- 1 lb. wedge of honeydew melon, seeded
- ½ c. lemon juice
- ½ c. orange juice
- 3 tbsp. Splenda
- 4 lemon or lime slices (optional)
- coarse kosher salt for rim of glasses (optional)
Directions:
- Day before serving, peel honeydew and cut into one-inch cubes for freezing.
- Arrange in a single layer in aluminum foil-lined 9 x 13 in. baking pan.
- Cover tightly and freeze.
- Salt four margarita glasses if desired.
- In blender or food processor, blend frozen melon cubes with lemon juice, orange juice, and Splenda until melon is pureed.
- Divide among four glasses and add sliced lemons or limes to side of glass for garnish if desired.
- Serves 4.
No sugar added punch
Ingredients:
- 46 oz. unsweetened pineapple juice, chilled
- 46 oz. unsweetened orange juice, chilled
- 4 packs cherry flavored Kool-Aid
- 4 L diet lemon-lime soda, chilled
- No sugar added vanilla ice cream
Directions:
- Mix juices, Kool-Aid mixes and lemon-lime soda in a large punch bowl.
- Scoop ice cream over punch and allow to melt.
- Serve.
