Mama's kitchen dilemmas

Egg Nog


  • 3 eggs, separated
  • Dash of salt
  • 3 tbs. Sugar
  • 1 ¼ c. milk
  • ¾ tsp. Vanilla extract
  • 1 c. cream
  • Nutmeg


  1. Put egg yolks in a bowl and set bowl in a pan of cracked ice.
  2. Add salt to the yolks and beat well.
  3. Add sugar and continue beating until well blended.
  4. Add milk and vanilla and mix thoroughly.
  5. Pour mixture into punch bowl.
  6. When ready to serve add the cream and fold in the egg whites beaten until stiff but not dry.
  7. Sprinkle with nutmeg and serve.
  8. For alcoholic eggnog, add 2 oz. rum.

Caution: consuming raw eggs can be hazardous




Dreamy Eggnog


  • 4 eggs
  • ¼ c. sugar
  • 1 qt. Chilled milk
  • 1 ½ tsp. Vanilla
  • ¼ tsp. Salt
  • Nutmeg


  1. Beat 3 whole eggs and 1 egg yolk until very thick and light in color.
  2. Add 3-½ tbsp sugar, beating thoroughly.
  3. Stir in milk, vanilla, and salt.
  4. Pour mixture into glasses.
  5. Beat remaining egg white until almost stiff.
  6. Add remaining sugar and beat until stiff.
  7. Top each glass of eggnog with whipped cream and nutmeg if desired.
  8. Serve immediately.

Serves 4 – 5 persons

Caution: consuming raw eggs can be hazardous




Fat-free egg nog


  • 1 ½ c. fat-free egg substitute
  • ½ c. Splenda
  • 2 tbsp. vanilla
  • 1 can evaporated skim milk
  • 3 c. regular skim milk
  • 1 tbsp. brandy


  1. Beat egg substitute on medium speed until light and fluffy.
  2. Add Splenda, vanilla and milks.
  3. Add brandy and mix well.
  4. Chill 24 hours to blend flavors.
  5. To serve: Stir well and sprinkle with nutmeg.
