Egg Nog
Ingredients:
- 3 eggs, separated
- Dash of salt
- 3 tbs. Sugar
- 1 ¼ c. milk
- ¾ tsp. Vanilla extract
- 1 c. cream
- Nutmeg
Directions:
- Put egg yolks in a bowl and set bowl in a pan of cracked ice.
- Add salt to the yolks and beat well.
- Add sugar and continue beating until well blended.
- Add milk and vanilla and mix thoroughly.
- Pour mixture into punch bowl.
- When ready to serve add the cream and fold in the egg whites beaten until stiff but not dry.
- Sprinkle with nutmeg and serve.
- For alcoholic eggnog, add 2 oz. rum.
Caution: consuming raw eggs can be hazardous
Dreamy Eggnog
Ingredients:
- 4 eggs
- ¼ c. sugar
- 1 qt. Chilled milk
- 1 ½ tsp. Vanilla
- ¼ tsp. Salt
- Nutmeg
Directions:
- Beat 3 whole eggs and 1 egg yolk until very thick and light in color.
- Add 3-½ tbsp sugar, beating thoroughly.
- Stir in milk, vanilla, and salt.
- Pour mixture into glasses.
- Beat remaining egg white until almost stiff.
- Add remaining sugar and beat until stiff.
- Top each glass of eggnog with whipped cream and nutmeg if desired.
- Serve immediately.
Serves 4 – 5 persons

Fat-free egg nog
Ingredients:
- 1 ½ c. fat-free egg substitute
- ½ c. Splenda
- 2 tbsp. vanilla
- 1 can evaporated skim milk
- 3 c. regular skim milk
- 1 tbsp. brandy
Directions:
- Beat egg substitute on medium speed until light and fluffy.
- Add Splenda, vanilla and milks.
- Add brandy and mix well.
- Chill 24 hours to blend flavors.
- To serve: Stir well and sprinkle with nutmeg.
