Mama's kitchen dilemmas




Agua De Nopal

Ingredients:

  • 2 Cactus Paddles
  • 1 quart Water
  • 1 Lemon
  • Sugar -- To Taste

Directions:

  1. Cut the raw paddles into pieces that will fit in your blender.
  2. Throw in 3-inch-long slices of lemon peel and sugar.
  3. Use the liquefy function until your mixture has the consistency of apple juice.
  4. Add ice and serve.

 

 

 

Caribbean Hot Stuff

Ingredients:

  • 1 coconut
  • 2 cups milk
  • 4 cups strong coffee
  • 1 tablespoon sugar

Directions:

  1. Punch two holes in to coconut, pour liquid into saucepan.
  2. Bake coconut for 30 minutes at 300 F degrees.
  3. Break open coconut, remove meat, and grate.
  4. Mix coconut meat, coconut liquid, and milk in a sauce pan.
  5. Heat over low heat until creamy.
  6. Strain.
  7. Toast grated coconut under broiler.
  8. Mix milk mixture, coffee, and sugar.
  9. Pour into mugs, garnish with toasted coconut.

 

 

 

Hot Buttered Pineapple

Ingredients:

  • 1 can (48 ounce size) pineapple juice
  • 2/3 cup orange juice
  • 2 tablespoons butter or margarine
  • 2 teaspoons packed brown sugar
  • 4 (3-inch size) sticks cinnamon

Directions:

  1. Combine all Ingredients: in large saucepan and bring to a boil.
  2. Reduce heat and simmer 20 minutes.
  3. Remove cinnamon sticks and serve hot.
