Quick and easy quiche


  • 1 can (12 oz.) evaporated skim milk
  • 3 egg substitutes
  • ¼ c. melted margarine
  • ½ c. biscuit mix
  • 1 c. shredded Swiss cheese
  • ½ c. cooked and diced bacon or ham


  1. Preheat oven to 350 degrees F.
  2. Place milk, egg substitutes, margarine, biscuit mix and cheese into a blender and blend for a few seconds.
  3. Pour mixture into well-greased 9-in. pie pan and top with meat.
  4. Bake at 350 degrees F for 45 minutes or until brown and set.
  5. Allow to cool for ten minutes before serving.




Greek fruit appetizers


  • 2 large cucumbers, cut into 16 inch by inch cubes
  • 1/2 medium-sized watermelon, cut into 16 inch by inch cubes
  • 32 pieces of feta cheese, cut into 1/2 inch cubes
  • oregano
  • olive oil
  • 36 toothpicks


  1. Place the cucumber and watermelon cubes on a tray.
  2. Place the feta cubes on top of the fruit cubes.
  3. Stab the feta cubes with toothpicks to hold the cubs together.
  4. Sprinkle the cucumber and feta cubes with oregano and olive oil.
