Black Bean and Corn Salsa  


  • 1 can black beans
  • 1 can diced tomatoes (preferably seasoned with green chilies)
  • 1 can chopped green chilies
  • 1 can yellow corn
  • 1 small jalapeno pepper (diced)
  • ½ tsp lime juice
  • Salt and pepper to taste  


  1. Mix in bowl together.
  2. Serve with tortilla chips.




Salmon ball appetizer


  • 1 (16 oz.) can salmon
  • 1 tsp. horseradish
  • 1 tbsp. lemon juice
  • 1 (8 oz.) pkg. reduced-fat or fat-free cream cheese
  • 1 sm. onion, diced
  • parsley flakes


  1. Mix all ingredients together and shape into ball.
  2. Cover with parsley flakes.
  3. Serve with melba crackers.
