Quick and Easy Candied Brussel Sprouts

Ingredients:

  • 1 bag frozen Brussel sprouts (defrosted)
  • 1 cup brown sugar
  • 2 cups water
  • 1/4 teaspoon salt

Directions:

  1. Put water in a medium sized microwavable bowl and add Brussel sprouts.
  2. Dust with sugar and salt until it is all used and microwave for five minutes.
  3. Serve hot.

 

 

Tortillas di Spagna

Ingredients:

  • 2 potatoes, peeled and sliced thinly
  • 1 onion, chopped
  • 4 tbsp of olive oil
  • 6 eggs, beaten
  • salt and pepper

Directions:

  1. Sautee the potatoes and onions in the oil until they are tender. Remove them from the pan and place them in a bowl.
  2. Add the beaten egg to the bowl and set the ingredients aside for 2 minutes.
  3. Empty the ingredients back into the pan.
  4. Sautee them on a low heat.
  5. Flip the egg and potato tortilla by sliding it out of the pan onto a lid and flipping the lid back onto the pan.
  6. Sautee the tortilla for another 3 minutes.
  7. Cut into squares and serve.

Serves: 4-6 persons
